Chef Van Nguyen, passionate about promoting healthy and sustainable eating, sought to introduce the local community of Bellevue to the vibrant world of Vietnamese plant-based cuisine by establishing Chay Concept Restaurant and Bar in the heart of the city.
To enhance the appeal of plant-based offerings, Chay Concept incorporates imitation meat into its dishes. This innovative ingredient not only provides an excellent way to satisfy cravings for classic favorites like Pho and Banh Mi but also makes it easier for those transitioning to a plant-based lifestyle to enjoy the culinary heritage of Vietnam without compromise.
